Sometimes ServiceNow uses the term "Application", and other times they use the term "Application Menu", which is pretty confusing to someone new. If I'm understanding this correctly, an "Application" doesn't actually DO anything; there is no real functionality within it; all of the functionality comes from the modules that the "Application" / "Application Menu" contains. It might help to state that in the training video.

What's application menu?
Application menus define the main content that users can access in the application navigator. You can configure which applications appear in the application navigator. Only application menus that contain modules appear in the application navigator.
Different users have access to different application menu and modules based on their roles. See the list of modules that are visible when a different user (admin, ITIL, and standard user) accessing same application menu called Self-Service.
Role Required
Admin role is required to create an application menu.

There is a little learning curve when understanding the Terminology that SNOW is trying to go with. However, it does appear the structure of Applications and Modules allows for Granular Organization.
