Included in the Developer Toolbox Update Set available on Share (link to Share in the post).
Very similar to the "Try It (Portal)" Tool, but this one gives the user the ability to select which portal they want to see the Catalog Item in. Both a Form button and List context menu UI Action.
Simply click on the portal's link and the Catalog Item will open in a new tab/window. The Portal you select will be saved as a User Preference record and displayed at the top of the list the next time.
I've attached some XML files for the UI Action and UI Page records. There are also two UI Message records for the title and instructions in the UI Page. These make it easier to support multiple languages without having to change any code. Try it out in a personal dev instance first.
Update August 8, 2023: Updated the UI Action to also show as a List context menu. The UI Page has been updated as well to save the last used Portal and display it at the top of the list.
