Vulnerability approvals - how do we secure Multi level approvals

When we defer a vulnerability group, an approval process is triggered. It seems there is just 1 level of approval from 'Vulnerable response' group that is needed. Can we have multi level approval so that after Vulnerable response group approval, the approval goes to some other user or group?

As per SN support:

Though not recommended, we can customize the 'Vulnerable Item State Approval' workflow on the 'sn_vul_change_approval' table to achieve the same.

Did support mention why that kind of thing wouldn't be recommended?
