We have a requirement to have one field on a catalogue request form to house a selection list of CIs for a user to pick.
We want them to be able to pick only Application CIs and Software CIs.
With the Software CIs we want to also show the Version information in the list
We do not want to have two fields on the form
We want to make it easy for the users to select.
Can you advise if this is doable as these are two separate back end tables in the CMDB?

You can reference a parent table like cmdb_ci and filter by class of application and software.

That's correct - if you point this field to cmdb_ci, you will not have easy access to fields in a child table.
You could hypothetically change the display value of the child table to a new field that shows a custom, calculating display name which includes version. This would give you the version in the catalog view.
Can you elaborate on how this would be used? Restricting this to a single field to make it easier for your users to fill out might not be the best approach. You could alternatively use 2 fields (1 for Application, 1 for Software), and instead add more help text or section dividers to make the form more user friendly.
