I have extended the Task table to a custom application. The role for the application is set for a group of users. On the create new form, if the System Admin runs it the Organization field shows up. If a user with the application role opens the form the organization is not there. How can this be fixed?
You need to give read access to this field to these users on the parent/task table.

Is Organization field from your custom table? Also check the ACL's created for your custom table.
I have added an ACL to the COMPANY field in the extended table. I already had a write ACL created. It still does not show up for anyone but the System ADMIN. I have other fields from the table on the form that are inherited from the master table and do not have the problem with them. Just the Company field is an issue. I did change the caption to Organization but would not think that is an issue.
If you Company or Organization is the custom field of new table. Then check the ACL's created for the new table. By default it assigns a new role to the ACL.
Also check the view where that field in added in form layout and then check the view of the user.
I added a custom field that also referenced the main Company table. It has the same effect. How do I look at the Company table and add the application user role to that table?
I found it. I had to add a READ ACL to the Company table for the application Role.
